The ingredients to make the delicious avocado toast by Cyril Lignac


To make a delicious avocado toast for 1 person, you need:


  • 1 very ripe avocado (neither too soft nor too hard)
  • 1 zucchini
  • some small radishes
  • 1 egg (preferably organic)
  • 1 scallion
  • 1 lemon
  • 1 slice of country bread
  • some fresh peas
  • coriander
  • parsley
  • chervil
  • salt
  • pepper
  • Espelette pepper powder
  • flower of salt

Step 1: cooking the soft-boiled egg

A soft-boiled egg is an egg cooked in its shell in boiling water for 6 minutes.

  • 1. Boil a pot of water, and immerse your organic egg in it for 6 minutes.
  • 2. At the end of the 6 minutes, remove the soft-boiled egg from the water using a skimmer.
  • 3. Immerse it directly in a bowl of cold water to cool it.
  • 4. Then peel your soft-boiled egg in water, so as not to damage it.


Step 2: cooking the peas

  • 1. Cook the peas in a saucepan of water with olive oil.
  • 2. At the end of cooking, drain and set aside.


Step 3: preparing the avocado

  • 1. Cut your avocado in half, lengthwise.
  • 2. Remove the pit, then use a spoon to scrape the avocado. Empty the flesh into a salad bowl.
  • 3. Mash with a fork and season with salt and a pinch of pepper or Espelette pepper. Mix.
  • 4. Add a few chopped coriander leaves. You can also add chopped parsley and chives.
  • 5. Chop the scallion and add it to the bowl.
  • 6. Cut the lemon in half and pour the juice of the lemon half into the preparation. Grate a few lemon zest in the salad bowl to flavor the avocado.
  • 7. Pour a drizzle of olive oil and mix everything.
  • 8. Keep cool.


Step 4: preparing the radishes


  • Remove the ends of the radishes and cut them in half, then into pieces.


Step 5: preparing the zucchini

  • With a peeler, make slices of zucchini (without peeling it).

Step 6: the final realization of the avocado toast


  • 1. Toast the slice of country bread.
  • 2. Spread the avocado mixture on top.
  • 3. Arrange on top of the peas, leaving a space in the middle for the egg (forming a small well).
  • 4. Add the radishes and the zucchini slices rolled upon themselves, still leaving space in the middle.
  • 5. Cut the soft-boiled egg in half and place the half egg in the middle of the toast.
  • 6. Finish by seasoning with Espelette pepper, fleur de sel, and a drizzle of olive oil.
