Tuna toast

Nothing like good canned food to help out. For these toasts, we use tuna and canned artichokes, two essentials in the pantry.

Preparation time: 10 minutes
Servings: 2 servings


  • 2 slices of country bread, about 2 cm (3/4 inch) thick, cut in half
  • 1 C. olive oil
  • 1 garlic clove cut in half
  • 1 can (170 g) canned tuna in oil, drained
  • 1/4 cup (60 ml) marinated artichoke hearts, chopped
  • 1 C. lemon juice
  • 2 tbsp. chopped capers
  • 6 (or more) basil leaves
  • 1/2 cup (125 ml) arugula leaves, packed
  •  A few thin slices of red onion


Brush one side of the bread halves with oil. Brown under the grill for about 2 minutes. Rub the garlic, cut the side of the clove, onto the oiled surface of the bread. Reserve.

In a medium bowl, combine the tuna, artichoke hearts, lemon juice, and capers. Mix gently to break up the tuna but leaving it in large pieces. Just before serving, tear the basil leaves and add them to the preparation. Garnish each slice of bread with arugula leaves and red onion slices. Place the tuna salad on top.
